DENVER – Nov. 5, 2018 – Local foodies and beer lovers, rejoice! Denver International Airport (DEN) today announced the opening of Tom’s Urban Kitchen and Tivoli Brewery, located at the Westin Denver International Airport, just off the airport’s outdoor plaza.
Tom’s Urban Kitchen and Tivoli Brewery is a Colorado-based brew-pub restaurant concept and is the first restaurant at DEN with an on-site brewery. The concept was co-founded in 2012 by Tom Ryan and Rick Schaden and currently has four other locations, including Portland, Los Angeles, Connecticut, and Las Vegas.

The brewery portion of the restaurant is franchised by the Denver-based Tivoli Brewing Company, a local beer institution founded in 1859 and relaunched in 2012. Tivoli will brew Jet Indian pale ale, an exclusive brew that will only be available at the airport. The company will also continue a partnership with Metropolitan State University of Denver by having students who are pursuing degrees or certificates in brewery and brewpub operations work in the airport brewery.
“Colorado is a paradise for craft beer lovers, and we wanted this amazing, signature space within the Westin Denver International Airport to reflect the Colorado experience with a brewpub that offers exclusive homegrown beverages and a taste of local Denver fare,” said airport CEO Kim Day. “This restaurant will complement our growing lineup of elevated dining offerings that tap into what our travelers are seeking – better options, local flavors and a great atmosphere.”
The restaurant is operated by Detroit-based MCE-DIA. MCE is an award winning, 100-percent woman-owned and certified Airport Concession Disadvantaged Business Enterprise (ACDBE) – a federal program that helps small, minority- and women-owned firms compete for airport business opportunities. MCE has developed and operates over 50 restaurants in 10 of the nation’s top airports.
“We are excited to open Tom’s Urban Kitchen and Tivoli Brewery and serve our guests with our World Class dining and hospitality experience”, said MCE CEO Andrea Hachem.
